You're right — Windows 10 File Explorer's metadata editing was quite handy, especially for bulk editing and selecting from previously used genres. Windows 11 changed some aspects of metadata management, and the behavior you're describing (remembering previous genres for quick selection) isn't as straightforward out of the box.
