Device sleep modes are automatically set to "Never" every time I use my computer
This is weird because I always have "Turn my screen off after" set to 5 minutes and "Make my device sleep after" set to 15 minutes every time as a default. But now it just keeps being set to "never" by itself. Is anyone else encountering this problem or is it just me?

It sounds like a bug or a setting issue. Try resetting your power plan to default or running a system scan to check for any corrupt files causing it.
