How to configure advanced partitioning when installing Linux Mint Cinnamon 22.3?

I'm looking to switch from Windows 10 to Linux Mint after doing a lot of research. I have a simple notebook with an i3 processor, 8GB of RAM, a 128GB M.2 NVMe SSD, and a 1TB HD. Initially, I thought about dual-booting, keeping Windows 10 on the HD in a specific partition and using the remaining SSD and HD for Linux, but I decided to switch entirely to Linux and lose this Windows dependency. However, Linux doesn't allow you to choose how and where to install apps like Windows does, so I'd like your help because I know from watching some videos how to configure HD partitions for storage.

And well... I don't really know how to do this (haha), so if you could help me, I would be immensely grateful.

The key thing to understand is that while you can't choose a folder during the installation of a program like you do in Windows, you have full control over where your personal files, documents, and game saves are stored. You will set this up during the installation process.
