This is a feature that compresses video data for high-resolution monitors. NVIDIA GPUs often have a limit of supporting only two DSC monitors simultaneously. This locks out the third display, making it seem to disable itself. The fix is to go into your monitor's own on-screen display (OSD) menu, find the DSC setting, and turn it off for at least one monitor.
