An update starts exactly when i need to use the computer

You want Windows patched without an update taking over when urgent work begins. Set accurate active hours under Settings > Update & Security > Windows Update > Change active hours, covering the period when the PC is normally used. After updates download, open Restart options and choose a specific restart time instead of waiting for Windows to select one. Keep the computer powered on outside active hours so installation can finish before the next work session. If these controls are unavailable or revert, the device is probably managed and Windows Update for Business or Group Policy controls the schedule; ask the administrator to review restart deadlines and notifications.
