How to Disable CoPilot
I have a user that really hates the CoPilot and it keeps coming up on his outlook. I tried disabling the Add In but didn't see it listed. Any way to locally disable CoPilot for just a single user

Sam, I did the following steps and it did look like it removed itself in the ribbon. However, this morning it is still showing up on emails
Hey there. Have you found a solution yet? We have disabled (removed) it from the Active add-ins here and also disabled it in the Power Platform's admin center and blocked the app in the Teams app store. Still shows up in e-mails. Did you find a solution kweezy?

I've also copied them below:
1. Open https://aka.ms/olksideload. If required, sign in to your Microsoft Outlook account.
2. In the Add-Ins for Outlook window, select My add-ins in the left pane.
3. On the Sales Copilot for Microsoft Outlook card, select Manage Add-In (...) at the bottom-right, and then select Remove.
Also the email banner can be disabled for the whole tenant within the M365 admin center:
