Best Practice for multiple Sharepoint Apps
Hello!
We have several power apps that are ready to be deployed into Prod for the first time for our Org. They all use Sharepoint Lists as we can't afford the Dataverse. These apps will be consumed by workers in the whole company but are based on different areas of the company. With this we will have hidden lists and document libraries. Think Policies and Procedures, Service requests, etc.
We were thinking about having a Sharepoint site called Apps or something like that where these backend lists and DLs would live. Users will need write access to those lists, but we would hide them from view. While the PowerApp front end would live on whatever area of the company it belonged to.
Is that what others are doing? It seems overkill to spin up a SharePoint site for each app.

The approach you mentioned should work for you without any issues if all users in company will have access to all lists and apps.
But if some SharePoint lists and apps will be used by specific set of users (based on department or groups) and other users in company should not have access to those lists and apps then it is better to create separate SharePoint sites based on departments/groups.
This will help to keep the data secure from other departments/groups. Also, it will be easier to manage the permissions for your SharePoint sites/lists and Power Apps canvas applications.
