RobBirnie in the list click +New and then click the pen & paper icon in the top right and select Edit columns. You can then drag columns to re-order them and de-select any that you don't want the user to see when they are adding the new item.
But... a health warning: I believe there is a column number limit after which this option won't be available and the adding or editing of items will revert to classic mode for the form. It has happened on one of my list forms. Trouble is I don't know what the maximum number of columns is before that happens.
