Subprojects created from template show up as the template file name when added to the master?

Row 1 (ID 1) is NOT the Project Summary Task. As I noted, and showed in my screen shot, the Project Summary Task is ID 0. While in the Gantt Chart view, go to, Gantt Chart Format > Show/Hide group > "Project Summary Task".
Once you have that set to the name you want in each subproject, that name will appear at the subproject summary line insertion point in the master.

The file name and and Title of the file are two different things. When a project is created, the file name and the Title are the same (i.e. "Project X"). When a user saves a Project file under a new name, that becomes the file name but the Title remains as it was (e.g. "Project X").
The file's Title is the same as the task name shown for the Project Summary Task (ID 0). When a subproject is inserted into a master, it is inserted and identified by it's Title.
When you create each file from your template, display the Project Summary Task and then change it to whatever you would like and that's how it will appear in your master. Note, the Title does NOT need to be the same as the saved file name although if they are different it can become very confusing.
