It may be an issue of corruption of your Gantt Chart view. You might try this:
- Switch to any view other than the Gantt Chart view
- Open the Organizer (File > Info > Organize Global Template).
- Select the Gantt Chart view in the list on the right side and hit Delete
4. Close out of the Organizer and select your Gantt Chart view. Does the row height stay fixed as you edit?

Go to view, table, more tables, select the entry table and turn off text wrapping there... or is that what you have already done?
