These here may provide a better way to find endpoints, but this too is a little bit of a mess of information, as opposed to the above links which don't appear to relate to Project online, which seems to have that first relevant link with nothing on it.

Should it also be noted that there are differences between Project Online (now named Microsoft Planner?) and the Planner implementation at the site level of SharePoint?

Honestly, I dunno ... but there was nothing from your links that assisted me in finding Project Online endpoints, unfortunately. (sorry! it's not meant harshly)
