Carrying over text formatting/highlighting when inserting sub-projects into master projects
Is it possible to carry over the formatting (bold, highlight/fill colours etc.) I've applied to a 'template project sheet' when I insert it into a master project, without having the 'Link to Project'...

Sorry, no. When you create a static master (i.e. insert subprojects with the "link to project" option unchecked), you are creating a new separate file. As such text formatting does not transfer.
