Can I delete an Enterprise Project Type (EPT) without deleting the existing projects?

It wont let you delete the EPT whilst there are project associated to it. You'll need to associate all the projects to a different EPT from the Change or Restart Workflows admin page using the "Associate projects with a new Enterprise Project Type" option.
If you didn't want to delete it the EPT, you could use the Departments feature to filter out the EPT from those users who you don't want to use it.

Thanks, Paul_Mather. Will there be any data loss when changing the project type? (Resulting changes to the Project Details pages would not remove fields, only add additional. The schedule templates and site templates are different, concerned those would be replaced for ongoing projects.)

All you'll find is that you might not see all the fields if the new EPT doesn't have the same Project fields added. I'd recommend you try it out with a test project so you know how it works before carrying out the steps on an actual project.
