availability of Sensitivity Label in Microsoft Project

You can use AIP to classify mpp files: https://docs.microsoft.com/en-us/azure/information-protection/rms-client/clientv2-admin-guide-file-types

Can we create some sort of macro in Microsoft project, so that we can create user defined sensitivity labels and we can select the sensitivity as required by the user Paul_Mather

If you are using Project Server / Project Online, you could have a Project level custom field that was used to store the sensitivity label - the users could set that. If you are using standalone MS Project / MPP files - many be you could use the project properties to add a new property:
