Planner tasks from premium projects not updating dates
Update: this seems to only be a problem with one of my premium projects. Any way to fix this without burning it all down?

Before going any further, I have a few questions :
- Is this a native Premium plan, or was it originally a Basic plan that was later converted to Premium?
- Does the issue occur in Planner for the web, Planner in Teams, or both?
- Are the dates correct when you open the task directly in the Premium project?
- Do other members of the project also see incorrect dates in "My Tasks"?
- If you create a new task in this project and then change its date, does the issue occur there as well?
The fact that the problem only affects a single project is an important clue. If your other Premium projects are synchronizing correctly, this doesn't look like a general Planner Premium limitation, but rather something specific to this particular project or the way it was created.

- I don't recall but I'm fairly certain it was native Premium

Thank you for the additional details.
Based on your answers, we have already been able to rule out several possibilities, such as a Teams client issue, a browser-specific issue, a user-specific issue, or a My Tasks synchronization problem.
The next check I would suggest is exporting the project to Excel and comparing the dates in the Excel export with the dates displayed in Planner.
If the dates are also incorrect in Excel, that could indicate that the issue exists within the project data itself.
If the dates are correct in Excel but incorrect in Planner, that would point more toward a display or rendering issue.
I would be interested to know what the Excel export shows
