Recipient name is being replaced with an alias

When I send an email to a particular contact, their formal contact name is being replaced with just their first name in all lowercase when received.   I.e. John Doe (mailto:email address removed for privacy reasons) is used in the email sent, but it arrives as simply "john".   My sent version still shows the formal recipient name, but if I copy myself, the version that arrives show the recipient as "john".  I have looked all through my contacts and I can't see where I have any alias defined.   This only happens with one contact.  Why is this formal contact name being replaced?
