Do you mean sending emails when the sender has the OoO on, or sending to (internal) people with OoO on?
For option 1, I believe that should be possible, however this would mean someone can't quickly reply to an email when they are OoO.
For option 2, what would you do for multiple people? I don't see a valid solution there.
