MS Outlook connection to gmail via IMAP
You could try adding your GMail IMAP account using File > Add Account ->Advanced options. i.e. Setup the server info and all the rest manually. Note - GMail, without OAuth/Modern authentication, requires that your Google Account use Two Factor Authentication and that Outlook use a Google Generated App password. This works on older versions of Outlook, but I've never tried it on the latest version of Outlook. Good luck.

Yes well, you see, Microsoft support knows about that too and they informed me of it.
Firstly, with the Outlook (classic) version in Office 365, you can't add an IMAP account just as IMAP - it goes straight to the browser authentication - which is the very thing that this post is trying to get around.
Secondly, you have to close Outlook, then go into "Control Panel" and Mail. Then you can add an IMAP account and specify the app-specific password and login details there. Which is great!
But then you launch Outlook (classic) Office 365, and it straightaway asks you to login via browser.
Which Google says you don't need to do - MS says you do need to. But Google would know.
Also there's someone on here who says you need to buy another version of Office for 250 USD and it will do the IMAP for you correctly.
