dangbrandondang thank you for your response. My one concern is that when I delete my account with the o”old authentication” and go to add my account back in, will Microsoft let me keep our email address or will I lose that? do you know?

The Internet Accounts preferences in macOS are for synchronizing your client (The Apple Mail application) with the server (Outlook.com). Since you are just making changes to the client, your email address, which is configured on the server, will remain usable.
