I use Categories on emails but they will disappear form list. Ideas how to recover and stop?

I have a list of about 30 categories that I use to manage my inbox.  Periodically some of the categories will disappear from the selection list and I have to recreate.  Any ideas on how to recover my categories and prevent from happening again?
