how to update the sender name in the new Outlook?

Bjh4850 The sender name for IMAP accounts is not editable.
For outlook.com and Microsoft 365 Work or School accounts, it picks the name up from the server.

I hope this feature (setting sender name on IMAP accounts) is added soon. I am using my iCloud account on the New Outlook, and otherwise it works very well.

Hello again... just touching base on this.
A number of people have reported the problem in the suggestions forum, and still nothing seems to have been done. Is there any way of giving this priority?

- Jan 15, 2024Either feedback or Help > Contact Support. Using contact support won't get it fixed immediately, but can help to show that is it a requirement.
Also - the new Outlook is a work in progress so just because nothing changed currently doesn't mean it won't in the future... but because of the way the Microsoft cloud works (and all accounts in new Outlook use the Microsoft cloud) it may take a while.
If they ever add the ability to use different display names for different aliases in outlook.com or Microsoft 365 accounts, you can expect it new Outlook.- Teresa_CyrusJan 15, 2024MVP

Microsoft is currently working on improving contact synchronization, deduplication, and GAL address list for the New Outlook. These updates will roll out over the next few months. However, there is no information on whether they will allow users to change the sender's name. It is unclear whether it is on their backlog list.
Therefore, I will piggyback on Diane's recommendation. Give Microsoft feedback but in two locations.
1) Microsoft Feedback Portal: Share how you use the Change Sender's Name, then post the link in this thread to allow others to vote. Also, the feedback team sometimes updates the status of a request in the portal.
2) From New Outlook, select Help | Feedback. Post the same details from above and include the link from the Feedback Portal. This way, Microsoft can easily review your feedback and others and then determine how to proceed with this requirement.
