Custom Forms for Creating a Meeting
I want to create a custom form (available to only a small number of users) that allows me to collect more data when a meeting is being booked. The form needs to be able to use drop down lists (single and multi select), checkboxes, radio buttons as well as time and date fields with widgets to enter data - all the usual kind of input fields. I need to set some fields as mandatory and in an ideal world I'd like some mechanism to potentially validate data. This is a corporate set up so whatever I attempt must not impact on others but for one team I want this to be my standard input form. I also can't use anything other than standard Outlook capabilities - it's unlikely corporate will approve add-ins!
Can anyone point me to resources that would make this possible?

This is a great initiative to streamline meeting bookings with tailored data collection, especially given the constraints of sticking to standard Outlook features. Implementing such a form using Outlook's built-in Developer options could be a practical path. It's a bit like finding hidden features in an online movie platform, but often overlooked!

It's possible only if you are using the old ("classic") Outlook.
You might want to consider using Bookings, which allows you to add custom fields and creates a webpage for users to access a webpage for users to access.

To create a custom meeting form in Outlook without using add-ins, start by enabling the Developer tab in Outlook by going to File > Options > Customize Ribbon and checking the Developer option

If you are using Outlook Classic, this might be able to be done with a dev form, I'm not qualified to give answers on that. It's just a thought, Diane Poremsky from Slipstick would know about that than I do.
If you are using New Outlook, I'm guessing any custom features haven't been updated yet, so you can offer feedback on MS forums here https://feedbackportal.microsoft.com/feedback/forum/89a8afa3-2e1c-ec11-b6e7-0022481f8472
