create data entry email template

I need to create a couple of fields on an email message that when sent the information will update an excel spreadsheet.  I can do this with the already defined data parts like TO:  From: etc.  I need to be able to edit the new message template and add the fields Company:, PO Number and have them picked up in a power automate flow that will update an excel spreadsheet.
