Remove or edit standard fields

I would like to be able to decide whether certain fields are optional or not. For instance, 'e-mail' is considered optional but I wonder how I can contact a customer without this or a phone number?

Also, 'select employee' is always visible, even if it's optional. Since I work by myself, this can be confusing and is unnecessary to be shown.
