How to revert back to mail from new outlook

SOLVED for those using Mail/Calendar

Go to:
C:\Users\[YourUserName]\AppData\Local\Packages\microsoft.windowscommunicationsapps_8wekyb3d8bbwe\LocalState\Migration
Delete the file settings.json
Done, you've reverted to Mail/Calendar.

I've been using this solution for our users at work and for the most part it has worked. However, I now have a user that says the settings.json file is being put back almost as soon as they delete it. Does anyone know why this file is constantly being replaced? Our apps are downloaded through Company Portal, not the Microsoft Store.
