How to limit the CoPilot scope in the tenant resources.

There's really no good way of doing this with Copilot for Microsoft 365, even Copilot for Sales is focused on Teams Meetings and then integration with Outlook/Exchange.
The question I would rather pose is, why are you attempting to limit Copilot's scope to just Exchange? Are you concerned with oversharing & sensitive data?
