Copilot icon not available in new outlook

I am a Copilot Research Group participant. We have been sent PPs that show Copilot available in new Outlook. However, I cannot find it there. I do find it in Word and Power Point. I have been in touch with Microsoft Support (Case #:1058342690). They suggested I make this post.
