Use custom document properties in Azure infomation Protection
Can i use custom document properties of Office files in Azure Information Protection?
I can seem to find any example of how to do that.

Yes it is possible, you can use an advance property called LabelByCustomProperty it is documented here. It allow to use Custom properties as labeling condition for office and PDFs.
