Sensitivity label policy, just for documents?
When creating a Sensitivity label policy there is at option to require users to apply a label.
This is great, but we want it to only apply at document, not everytime the user sends a new mail.
Is this possible?
You can use the setting "DisableMandatoryInOutlook" using PowerShell.

And I just found this doc that explain how you can use Outlook-specific options for default label and mandatory labeling
