On Mac you can only "consume" the AIP functionality - basically open labeled and/or protected files. But you cannot classify a document. A native Mac client that supports all the AIP functionalities is in the works and should be released soon.
The "protect" functionality has been available for a while on Mac, via the RMS sharing app.
