Shared PC's in Intune vs Intune For Education

I would definitely go the Shared PC route (it should not even be in Kiosk, looks like when looking at the general requirements) but that's up to you. With SharePC mode you can also link your Education policies if necessary with this key SetEduPolicies (I have no direct experience with this though). We have several customers that have similar use cases and they use Share PC Mode and it works for them.
If you combine this with Autopilot Self Deploying mode, you can enroll this devices unattended and quickly. This is really useful.
