What are you trying to achieve?
The E5 is mapped correctly, which one? Just using the E5 Enterprise will not help you upgrade a Pro to Enterprise. If you already have a Pro version activated, the E5 will not upgrade to Enterprise.
If your goal is to reach PRO, then make sure you have activated PRO on your device before the OOBE.
If your goal is Enterprise: you need either OEM directly with Windows Enterprise or you need a Windows Enterprise license to upgrade your PRO license.
Take a look :
Try deleting one of them and see what happens.
Not necessary, define your scope first.
- If you want to automate this process and make it a Modern Workplace, then that's what you should do.
