Why wouldnt it be possible. The first thing that comes to mind is auto bcc the message to some (shared) mailbox and configure the auto-reply there.

Did you try the Transport rule? You can scope it to senders outside of the organization and use "BCC" as an action to copy those messages to some shared mailbox. Then, configure OOO reply or Inbox rule on the shared mailbox to handle the reply.
