Hybrid mail deployment with a Linux SMTP

We need to set up sub-domains and have email managed for those sub-domains by an on premise Linux SMTP server, while maintaining our domain mail exchange server with Office 365.  Is this possible and if it is can you point me to resources that will walk through how to set it up?  We are a mid-sized non profit and will be doing the setup ourselves.
