Mail routing to external thru EOP

We have Exchange 2016 Hybrid with all users' mailboxes in Exchange online ( shared mailboxes in on-premises EX 2016 servers), currently configured all outgoing email from Exchange Online coming back to on-premises 3rd party host. 

Now, we would like to configure all outgoing emails from Exchange online using Microsoft EOP, not coming to on-prem 3rd party host.

How can i configure Outbound connector in Exchange online to use all outgoing emails routed to EOP?

We tested with couple of domains' outbound emails, configured outbound partner connector and transport rule to use the connector if the recipient domain is specific domain.

But as we decided to use Exchange online outgoing emails thru Microsoft, I would like to know the best practice to

    Do you use Centralized transport? If yes, you need to disable. Once disabled and after removing the connector which is pointing to On-prem, Office365 by default route to EOP. You don't need any special configuration
