AAD is designed to only have the user represented once, so you should have either a guest user or a user, not both. You can try and hide the problem account from the GAL, but it may not solve your issues. The issue might be occurring because users have cached the incorrect account in Outlook (through the type ahead feature), so messages are being sent to the guest account, which you've changed the email address for and is thus incorrect.

In my case the guest users already hidden from GAL but still getting those suggestions even after hitting the empty auto complete list option from outlook settings.
