You should be good. Maybe you can scale down a bit and when needed increase your VMs to see how things are going.

Let's see how it works for my requirements, and I'll come back here with my findings. I'm still questioning myself, the Exchange 2019 system requirements published by Microsoft here - https://learn.microsoft.com/en-us/exchange/plan-and-deploy/system-requirements?view=exchserver-2019. They recommend a minimum of 128 GB for mailbox servers and 64 GB for Edge Transport. Is there any chance the sizing calculator could show RAM utilization below 128 GB, or does it default to 128 GB and increase based on higher usage? Do you have any previous experience with this?
