I did this for a customer last year and used the Exchange calculator for the initial sizing followed by some tweaking.
In the end we decided to host the 2 Exchange server on a vmware platform on-premises, the cost of hosting the servers in Azure was way too high.

All our user mailboxes are migrated to M365 and are hosted on-premises in Azure. We primarily use legacy protocols for legacy apps, shared mailboxes, and an archive manager. Will this sizing still be applicable? -
Additionally, version 10.7 is the latest version available at this link - https://www.microsoft.com/en-us/download/details.aspx?id=102123. One of the forums mentioned that the sizing calculator can only be downloaded from the Volume Licensing Service Center. which is true, may the post is old?

I'm still questioning myself, the Exchange 2019 system requirements published by Microsoft here - https://learn.microsoft.com/en-us/exchange/plan-and-deploy/system-requirements?view=exchserver-2019. They recommend a minimum of 128 GB for mailbox servers and 64 GB for Edge Transport. Is there any chance the sizing calculator could show RAM utilization below 128 GB, or does it default to 128 GB and increase based on higher usage? Do you have any previous experience with this?
