Return to previous Sheet (Excel Online)
In our organization sharepoint an excel online document was edited incorrectly, is it possible to return the excel file to a previous version?

that depends on whether or not version history is enabled in the SharePoint library. If versioning is enabled, you can restore earlier versions.
Go to the SharePoint library, navigate to the document and open the context menu, either by right-clicking the document or clicking on the three dots (the look depends on your SharePoint version).
Next click Version History. In the Version History window you can click the drop-down arrow next to the date to see commands to view the file of that version, or to restore that version. If you select restore, it will be added as a new version to the top of the stack. See screenshots below.
