I have a very large Excel chart I need to select nonadjacent cells from different columns from to copy and use to create line graphs. Is this even possible?

Or you may create the graph directly on your data - start with any one and after that through Select data change your axis and series label on selection your need. By selecting as above, or better manually. e.g. for axis label that could be
=(Sheet1!$A$1:$A$10,Sheet1!$A$21:$A$30,Sheet1!$A$41:$A$50)
similar for series
