Creating production schedule in Project
Since whole day today, I am trying to learn Project professional, and I think its bit clear to me. This looks to be good enough for scheduling purpose, since I would be using in a production environment where wide variety and small qty products orders are received, so several tasks throughout the week might be needed, and I am yet to ascertain if that would be practically possible to do in this software.
Each product have multiple process stages, so much repetitive work shall be present.
Any helps further to guide is highly appreciated.
Based on the conversation I have seen in this thread, you DO NOT need Project Online. That is an enterprise Project-Portfolio Management (PPM) tool that needs to be configured according to your requirements for managing enterprise projects and resources. I would recommend that you stick with the desktop application, as I believe it will meet your needs. Hope this helps.

As an update, we started using Project in Production scheduling and it seems to be working fine. Looks like we can keep using it for longer term. We are using Desktop client, for now we took subscription of Project 3 to download the desktop since it gives monthly option, but we hope that soon we buy Perpetual license of Project in a month or so.
Perhaps creating scheduling is possible for us now, and next thing to learn is get actuals from shop floor and update in timely manner, reschedule as needed. Since things are not so well organized at shop floor for now, we may need to reschedule quite often, and that seems to be a challenge for now.
Upon creation of schedule, we are levelling it, before that we take care about predecessors and assigning resources' that most of the time they fit in well, but occasionally we overallocated and team planner show this issue.
We manage reassigning the tasks, but looks like team planner view is good to handle it but can you please help understanding its use and optimization a bit, for example in screen shot below, a large task is of 8h, but other are .1h and 3h, some task appear as single like, where as some as rectangle block? what does that mean?

It simply means that the timescale you have set in the Team Planner view is too coarse to show the .1h and .3h assignments in anything other an a narrow line. If you want to show the short assignments, you'll need to set the timescale to hours or perhaps even minutes, but doing so will make the 8h assignment span several screen scrolls.

I would like to continue seeking help in creating a production schedule mechanism in Project.
We have been able to create schedules, but there are many color and size of products are present and we would like to group them, still respecting each product's predecessors stages, delivery dates etc. what's best strategy/ way to handle this requirement?
I can create custom fields for color, size etc if that helps.
