Excel Sheet for Data of Street Vendors

Hi, I'm brand new to excel sheets but I would like to create database or excel sheet with data that contains locations, types of vending (food, clothing, flowers), time available, and other relevant information that would eventually be inputed into softwares such as Tableau to creates filtered pinpoints all across Southern California of street vendors. (I have around 1k of different street vendors that can be inputed) How could I make the most precise and accurate sheet that could easily be inputed within Tableau?
