Employee Attendance Tracker Question

Is there are simple formula I can use that counts the number of times a particular letter appears in a list?

For example, S = Sick, how do I calculate the number of times this appears throughout the year.

      Hi!

       

      I need a solution to a problem similar to this one. If every letter/code has a number (diferent every time) in the previous column (and multiple columns), how can I work with this data? (I need to figure out how many hours do my team spend in every project (1 code = 1 project)
