Windows 10 lag on alt + tab and start menu

I have this issue on Windows 10 on 2 different PCs, one with a recent windows fresh install.
After a while the alt + tab, start menu, even the media keys response gets really slow to respond, it takes over 30 seconds to execute and then it does everything at once.
The only solution I found is to restart Windows Explorer, but having to do that multiple times a day is very frustrating.
I tried looking for solutions and found only to disable the Focus Assist in settings which did not help at all.
I looked in Event Viewer and can't find some error/warning to understand what is happening.

Is there anyone who can suggest what to do to at least find the source of the issues?
Both PCs are updated to the latest version of Windows 10, both have Nvidia RTX graphics cards and Ryzen 3600 CPUs.
I can provide more info if anyone has some hint of what's going on
