For chat forwarding, you can easily forward any singular message to another chat. Simply right click on the message or choose the "..." and select forward chat. The newly opened box will let you choose where to forward this message. It can either be to an existing chat, group chat, or person. Try it out and let me know if you have any questions.
For forwarding multiple messages, no you cannot share an entire chat with multiple messages or forward the entire chat to another group chat. Only singular messages can be forwarded.
On hiding Apps, do you want to make certain Apps undiscoverable within your tenant? I don't know the answer, but I will ask.
For collecting centralized logs, I will check back with our team to see if this is possible.
