Paul Youngberg your setup has multiple potential failure points. We don't recommend having input go through USB and output through 3.5mm jack (which is there specifically for a headset for accessibility / hearing impairment situations). For USB, is there an extender in the path? If so we have seen those be very flaky with USB 3. I am not at all familiar with the Easy Mic device but typically the Vaddio cameras connect through some kind of a "box" / DSP type device which converts the HDMI output to USB, and we've seen issues with some FW versions on DSPs dropping connections on USB.
Net net, what you have is not an MTR problem, but rather is happening upstream of MTR. The USB devices connected to MTR as a Windows device are dropping / resetting their USB connections, so the issue is with the USB device(s). For our Certified devices, one of the things we actually test for is stability of long running USB connections, which not all USB devices support well. So if you connect the same USB devices to any Windows PC and leave them running (ie being used) you should see the same drop out behavior, and then would need to work with that device OEM for support on that behavior.
