Rob Hupf thanks for sharing the screenshot. You need to go to Teams Admin Center >Teams > Teams update policies [Updated the screenshot in the post]. Then select the policy and click edit - it should show the three options for 'Show preview features'. Please let me know if you still don't see the option.
