Snipping Tool can now recognize screenshots of tables
Snipping Tool can recognize screenshots of tables, and you can copy out the contents as a table.

OCR is awesome, why don't we have it in the regular photos app though? So many screenshots I go through wishing the photos app had this feature
This is a nice updat. Could love to test it out soon.
