Column header formatting for Lists when using Quick Edit
I've come across several options to format column data & headers in (modern) Lists.

But is there also an option to define the look & feel of the column headers when using Quick Edit mode?
When using Quick Edit the column headers turn dark grey on a dark grey background making it almost impossible to read them.
Can this be determined centrally for all Site Collections on our tenant or is this done per site collection?

Did you ever figure out the CSS class to edit the column headers in “Quick Edit” view? I am having this same problem (.ms-vh2, .ms-vh2-nofilter, and a.ms-headerSortTitleLink do the trick in normal view but not quick edit)
