Unfortunately, there’s currently no way to disable screenshots in Teams on iOS through the policy you’ve set. While the key

com.microsoft.intune.mam.screencapturecontrol = Disabled

works for apps like Outlook, Teams on iOS doesn’t honor it. This isn’t a configuration error but rather a current limitation of the iOS version of Teams.

At the moment, there’s no supported workaround through Intune or Entra ID to block screenshots in Teams on iOS. If data protection is critical, you could consider other device-level restrictions via MDM, keeping in mind that iOS has limited capabilities to prevent screenshots.
